
One of my favorite dishes! The orange peppers are sweet and tender and make for a wonderful combination with the tomato sauce.

I like to mince the tops of the peppers and add them into the stuffing mixture of rice, ground lean beef, onions and mushrooms. Parmesan, salt and pepper to taste.

There is always leftover stuffing. Making them into meatballs to adds to the heartiness of the sauce. This works really well and makes for really yummy leftovers.

The end result is a scrumptious hearty meal. These peppers were quite large and took over 2 hours to fully cook in a 350º oven. They could have used an additional 30 minutes as they were still a little soft inside and the pepper had a little to much bite. But, the family was getting hungry.
